Dining is a multi-sensory experience that those living with dementia may not be fully experiencing. AHCA/NCAL, the Dementia Connection Institute, and Incite Strategic Partners are hosting a free webinar on Tuesday, December 10 at 1 p.m. EST titled “Optimizing Dining and Nutrition Outcomes for Residents with Dementia.”
This session will focus on nutrition issues specific to dementia, including nutrients and food components to support cognitive health, dementia dining issues, and evidence-based sensory techniques for enhancing wellness at mealtimes. Newly developed programming addressing the multi-sensory nature of eating and the dining environment can enhance mealtimes for those with dementia. Learning objectives include:
- Be able to describe the need to consume a nutritious diet for those living with dementia and consequences of low intake
- List three foods/ food components/ nutrients shown to improve cognitive health, boost mood, and support physical health in older adults with dementia
- Understand the evidenced-based, sensory techniques in offering an effective wellness dining program based on the Dementia Connection Model©.

Dr. Jennifer Stelter, also known as The Oil Doctor, Psy.D., is a Clinical Psychologist, Senior Living and Dementia Care Consultant, Johns Hopkins University Press author and national speaker, and the creator of the Dementia Connection Model©. She has 30 years of experience in the healthcare field and over 13 years in the senior living industry. Dr. Stelter is the co-founder and CEO of the Dementia Connection Institute by The Oil Doctor, Psy.D., LLC, providing education, training, consultation, and clinical services to healthcare organizations and family caregivers. She is the developer and Master Trainer for the internationally accredited Dementia Connection Specialist (DCS/DCSCT) Certification Program. Jen Bruning MS, RDN, LDN, serves as the Director of Partner Education for Incite Strategic Partners, the exclusive Group Purchasing Organization of American Health Care Association/ National Center for Assisted Living. Prior to coming to Incite, Jen spent her dietetics career in food service, in both the corporate wellness and senior living sectors helping to shape the dining experience of clients around the country. Jen has previously held the positions of professor of nutrition at Columbia College Chicago, Wellness Director & Nutrition Strategist for large national food service providers, and both clinical and food service leadership roles in a skilled nursing environment. Jen is currently in her ninth year as a National Media Spokesperson for the Academy of Nutrition & Dietetics. She presents dining and nutrition-related educational content to senior living professionals on a regular basis, including the American Health Care Association/National Center for Assisted Living, many AHCA/NCAL state associations, and industry groups such as ICAA.
